Often referred to as Boston squid, Loligo or longfin, is the premium squid on the market. Surprisingly enough the Port of Galilee in Rhode Island has lead the industry for generations. The squid meat is creamy white and it cooks up tender and succulent.
Calamari is typically fried or sautéed and often accompanied with cocktail sauce, marinara or an aioli.
